BC Week 16

One of my favourite weeks so far. Delicious dishes but a low total cost of groceries. I am especially fond of the Pumpkin Burgers.
I have found myself to go a bit wild on the vegetables when doing groceries, and I seem to have done so this time again. A whole pumpkin (butternut squash) plus a whole celeriac (turnip celery root), for one person. I know that this sounds crazy, but have a look at the recipes and you will find that it isn’t overkill on these two vegetables. The celeriac is hidden in a risotto and a leek mash, and the pumpkin is part of a salad, “burgers” and a different risotto. Both can be roasted or used in soup, should you find yourself with any leftovers when your veggies were bigger than the ones I bought.
The celery and lettuce will definitely have leftovers. Luckily, lettuce can be used in salads and soups, and the celery lasts very long. If you don’t like raw celery in your lunchbox, steam the stalks together with carrots, they go marvelously together. Also as a raw salad with some herbs or cumin.

Week 16
My shopping list of this week (if I bought more, the quantity bought is between brackets). Please note that you need a can of tomato cubes too, which I forgot to buy:

  • 310gr pork belly (400gr)
  • 285gr plaice fillets, frozen (500gr)
  • 7 eggs (carton of 10)
  • 1 butternut squash
  • 2 leeks
  • 1 celeriac
  • celery
  • 750gr potatoes (2.5kg)
  • red onions
  • 1 little gem (pack of 3)
  • 200gr risotto rice (1kg)
  • feta (pack of 250gr)
  • 250gr Swiss brown mushrooms

I spent €18.92. This includes the following leftovers: 1 pork belly slice (90gr), 215gr frozen plaice, 3 eggs, 2-3 red onions, 1.75kg potatoes, 2 little gem, feta.
I used the following items from my pantry this week: Garlic, 1 can tomatoes, tomato paste, spaghetti, soy sauce, sambal, vinegar, mustard, 1 stock cube.
Plus these standard pantry items: Sunflower oil, butter, salt/pepper, dried herbs (oregano, basil, thyme, miced herbs), spices(paprika powder, cumin, star anise).

Day 1 – Saturday
Lunch: Pumpkin and Egg Salad

Pantry items: Sunflower oil, mixed herbs, paprika powder

Dinner: Celeriac Risotto

Day 2 – Sunday
Lunch: Leek and Celeriac Mash

Dinner: Plaice in Italian Tomato Sauce

Day 3 – Monday

Day 4 – Tuesday

Day 5 – Wednesday
Dinner: Noodle Bowl with Chinese Flavoured Pork Belly

It is a popular ingredient in Chinese cooking, so if you ever find yourself with excess pork belly, open a Chinese cookbook and you will find plenty of options.

Day 6 – Thursday
Dinner: Paprika Pork Belly with Roast Root Vegetables
