Chocolate is always the most popular flavour in anything and you will find that this fudge will be no exception.
- 500gr sugar
- 75gr glucose syrup
- 200gr heavy cream
- 150gr milk
- 1/2 tsp cinnamon
- pinch of salt
- 150gr dark bitter chocolate chips
- 50gr butter
Makes approx. 75 pieces
Combine all ingredients except the chocolate and butter in a large, thick based pan. The mixture more than doubles when cooking so don’t be tempted to use a small saucepan.
Cook to 114°C.
Add the chocolate and butter, stir well and again heat to 114°C.
Leave to cook for 10 minutes, then beat with a mixer until matted and thickened. Spread in a lined baking pan and leave to set before cutting.
