Vanilla may be known for being “boring” but I for one adore everything vanilla. And that includes this fudge Feel free to add inclusions if you want something more diverse. That’s the best part about vanilla, anything goes. Use dried figs or raisins, or any kind of nut.
- 1 vanilla bean
- 1 can condensed milk (385gr)
- 250gr sugar
- 100gr brown moist sugar
- 150ml/gr milk
- pinch of salt
- 100gr butter

Slice the vanilla bean open lengthwise, scrape out the seeds and place both the pod and seeds in the a heavy based sauce pan with all other ingredients except the butter. Heat while stirring occasionally to 115°C.
Take the pan off the heat, and stir in the butter. Leave for 15-20 minutes.
With handheld mixers, beat the batter until it becomes thick and opaque.
Push in a buttered 20cm square tin or pastry ring. Leave for at least 3 hours to set, then cut.
