Citrus Spice Winter Syrup

I love having a couple of bottles of this syrup in my cupboard, as it is the drinks equivalent of comfort food. Simply add boiling water, and enjoy. This does make for quite a quantity, you may want to halve the amount if you – unlike me – don’t gift away the bulk of it.

Ingredients:

  • Juice of 5 grapefruits (550gr juice)
  • Juice of 3 lemons (165gr)
  • Juice of 3 limes (100gr)
  • 2 liter orange juice
  • 2 sticks of cinnamon
  • 8 juniper berries
  • 2 star anise
  • 10 cloves
  • 10 cloves
  • 1 kg sugar

Makes around 3 liter

Recipe:

Place all ingredients in a pot.
Put a lid on the pot and bring to a boil. Let it simmer for 15 minutes, then turn off the heat and let it stand for an hour for the flavours to infuse.

Fish out the spices.
Heat again and pour into hot, sterilised bottles (I sterilise mine by washing them, rinsing and placing them in a 100°C oven). Keeps for at least 3 months.
