The skin of peaches gives me the heebie jeebies. Even thinking about the feeling gives me goosebumps all over. But by poaching the peaches briefly, this skin comes right off! The peaches are then baked in a bit of butter which gives them a rich flavour.
- 2 peaches
- 1 tsp butter
- 2 large spoons Greek yogurt
- 1 tsp honey
- 1 tbs pistachios, coarsely chopped
Bring a pan of water to a rolling boil. Add the peaches and simmer for 30 seconds. Shock them under cold water.
Push the skin off. Cut the peaches in half and remove the stone. Cut each piece in half again.
Melt the butter in the sauce pan. Add the peaches and bake on a medium high flame for a minute per side or until browned.
Scoop the yogurt in a bowl. Add the peaches. Drizzle the honey over the peaches and sprinkle the pistachios over the dish.
