Tagliatelle with Cod and Leek Sauce (BC)

Fish and tomato go very well with pasta, and they combine with leek to make this lovely sauce. Don’t be fooled by all the pasta, this dish has a lot of vegetables and not that much pasta.

Ingredients:

  • 1 tbs butter
  • 1 medium leek
  • 1 small sprig of rosemary
  • 1 large garlic clove
  • 1/2 can tomatoes (200gr)
  • salt/pepper
  • 110gr cod
  • 65gr tagliatelle

Serves 1 as part of the Budget Challenge

Recipe:

Cook the tagliatelle until al dente. Strain when cooked.

Slice the leek into rings. Chop the rosemary and garlic finely.
Heat the butter in a thick based saucepan.
Add the leek and the rosemary. Simmer gently for 4 minutes. Add the garlic and simmer for 2 more minutes.
Add the tomatoes and leave to simmer for 2 minutes. Season to taste with salt and pepper.
Cut the cod into chunks. Add it to the sauce and simmer for 2 minutes.
Stir in the pasta and serve.
