Beef and broccoli stir fry (BC)

Sweet and sour chili sauce is a perfect addition to stir-fries. Not only is it far cheaper than stir-fry sauces, but you don’t need a lot and the leftovers can be used for a range of dishes. It’s great with any type of baked potato, especially paired with crème fraîche. But you can also serve it as a dip for meatballs or spring rolls, or stir it into a pasta salad.

Ingredients:

  • 150gr beef steak
  • 1/2 tsp sunflower oil
  • 75gr green beans
  • 140gr broccoli
  • 100gr spinach
  • 1/2 tsp sunflower oil
  • 150gr stir-fry ready noodles
  • 3 tbs sweet and sour chili sauce
  • 2 tbs finely chopped parsley

Serves 1 as part of the Budget Challenge

Recipe:

Heat the oil in a frying pan or wok. Bake the steak in 2 minutes per side brown. Take the meat out of the pan and let it rest 8-10 minutes on a cutting board.

Cut the tops off the beans.
Cut the broccoli into florets and the stalk into slices. Heat the oil for the veggies in the pan. Bake the broccoli and beans brown on a high flame, then lower the flame and bake 2 more minutes to cook them a little more.
Add the noodles and spinach and bake for 1 minute longer.

Slice the beef. Toss the beef with the chili sauce and parsley through the remaining ingredients in the pan. Heat for 1 minute and serve.

Schud het vlees met de zoetzure chilisaus en peterselie door de noodles en groentes. Verwarm nog 1 minuut.
