Potatoes and bacon go so very well together. Add some crème frâiche to create a real winner.
- 250gr floury potato
- 1 tsp sunflower oil
- 1 small onion
- 2 slices bacon (25gr), in pieces
- 2 tbs crème frâiche
- 2 tbs fresh parsley
Serves 1 as part of the Budget Challenge
Slice the potato. Steam or cook the potato until cooked through.
Slice the onion and bake it until soft in the oil.
Combine the onion, bacon, crème frâiche, parsley, salt and pepper. Toss with the potato and place in an oven dish.
Place under a hot grill for 10 minutes or until brown.
