Noodle Bowl with Chinese Flavoured Pork Belly (BC)

Noodle bowls are great, you place some noodles on the bottom and top it with whatever strikes your fancy.

Ingredients:

  • 160gr pork belly
  • 1 tbs soy sauce
  • 1/2 tsp sambal
  • 1/4th tsp paprika powder
  • 1/4th tsp cumin
  • 1/2 star anise
  • 2 sticks celery (200gr)
  • 1 red onion
  • 1 tsp sunflower oil
  • 80gr rice noodles or other pasta
  • 1 hardboiled egg

Serves 1 as part of the Budget Challenge

Recipe:

Cut the pork belly into strips or cubes.
Combine the soy sauce, sambal, paprika, cumin and star anise. Stir the pork belly into the marinade and leave to infuse for 30 minutes.

Cut the onion into rings. Heat the oil in a large frying pan.
Add the onion and sweat softly. Take the onion out of the pan.
Add the pork belly to the pan. On a high flame, bake for 4-5 minutes or until the pork is cooked through.

Meanwhile, cut the celery into 7cm fries.
Heat a pan of water to a rolling boil. Cook the noodles until just done. Add the celery for the last 2 minutes.

Place the noodles and celery in a bowl. Top with the pork.
Quickly heat the onions in the frying pan and add them to the bowl. Slice the egg in half and place on top.
