Skewered pork (BC)

I adore my panini press. Not only does it make brilliant hot sandwiches, it is also great for indoor grilling, like these pork skewers. If you bake these in a pan, measure the skewers to the size of your pan. It’s terribly annoying to have the skewers hanging above the baking surface at one end.

Ingredients:

  • 160gr pork tenderloin
  • 1/2 tsp sunflower oil
  • 1/2 tsp paprika
  • salt/pepper
  • 1 red onion
  • 1/4th bell pepper
  • 2-3 Swiss brown mushrooms

Serves 1 as part of the Budget Challenge

Recipe:

Cut the pork in 1cm thick slices. Place the meat in a bowl with the oil and paprika. Add salt and pepper to taste. Stir to combine.

Peel the onion. Cut into quarters and then halve each quarter.
Cut the bell pepper into 1x2cm pieces.
Halve the mushrooms.

Skewer the pork and vegetables. Skewer the meat through the long side, to allow for even cooking.
Bake 1.5-2 minutes per side or until browned and cooked through.
Serve with garlic beans and rice or fries.
