If doing the weekly menu, this is an alternative to the leek potato soup, as this is more bring-to-work friendly.
- 1/2 leek
- 150gr peeled potato
- 1 tsp coarse mustard
- 2 tsp Greek yogurt
- 1 tsp mayonnaise
- 1/2 tsp dried dill or chives
- 1 hardboiled egg
Serves 1 as part of the Budget Challenge
Wash and slice the leek.
Cube the potato. Cook the potato cubes for 6 minutes or until just done. Add the leek for the final 2 minutes.
Drain the potato and leek and rinse under cold water.
Combine the mustard, yogurt, mayo and herbs. Season to taste with salt and pepper.
Stir the potato and leek through the dressing. Serve with the hardboiled egg.
