A very easy recipe, which I make to use up leftovers. You can fancy up the tomato sauce but I kept it simple.
- 1/2 can tomatoes (400gr can)
- 1/4 tsp paprika powder
- 1/2 red bell pepper
- 1 egg
- 1 potato (150gr)
Serves 1 as part of the Budget Challenge
Cut the potato into 6 wedges and cook or steam until just done.
Combine the tomatoes and paprika powder in an oven proof dish. Place the bell pepper half in the middle and the potato wedges around it. Crack the egg gently into the middle of the bell pepper.
Season to taste with salt and pepper and some paprika powder.
Bake on 180°C for 20 (soft boiled) to 30 (hard boiled) minutes.
