Tortilla Pizza with Spinach and Peas (BC)

We all have those moments where we crave pizza above all else. This is the very next thing, but much quicker to make. You can use many different toppings to your liking.

Ingredients:

  • 1 tortilla wrap
  • 90gr frozen spinach
  • 3 tbs cooking cream
  • 1/2 tsp dried basil
  • 50gr frozen peas
  • 3 slices bacon
  • 2 tbs feta cheese
  • salt/pepper

Serves 1 as part of the Budget Challenge

Recipe:

Combine the spinach and cream in the smallest sauce pan you have. Simmer gently until the spinach has defrosted fully. Stir in the basil and season to taste with salt and pepper. Don’t use too much salt, both the bacon and the feta contain plenty.

Rinse the peas under cold water to defrost them.
Spread the spinach over the tortilla. Divide the peas over the base, then top with bacon and feta.

Bake for 5 minutes on 220°C
